This is currently my favorite hot pot spot in Seattle. The spice level is no joke — easily the spiciest hot pot in the city in my opinion. I usually order medium spicy, and it’s already very intense and satisfying. The ingredients are fresh and well prepared, and they also offer several Sichuan specialty items that you don’t always see at other hot pot places. Another big plus is the condiment bar: it’s very well stocked, with a wide variety of dipping sauces, small side dishes, and even fruit and desserts. If you’re looking for an authentic, boldly spicy Sichuan hot pot experience, this is a must-visit.

On a business trip to Seattle I had a craving for Hot Pot, so I convinced my colleague to join me. We researched which one was worth going to and decided on Chengdu Memory. First off, the name isn’t great, but fortunately the food was stellar! We went for the Pork Bone Broth, since my colleague can’t handle too much spice. We then hit up the iPad and started ordering. The menu is extensive and has a plethora of options with a wide variety of meats, seafood and veggies. The quality of the meat was high, as well as the veggies. As for seafood, we ordered the fish fillets and the sliced abalone… the latter sounded great, but probably would skip it next time. The sauce bar has an extensive selection of things to choose from, along with a poster of recommended sauce combos. They do charge $2.95 per person for the sauce bar, which is a first for me. The restaurant itself gets loud, but in a good way and the service staff is very attentive and nice. The next time I come back, I’d definitely consider returning!

A pretty authentic Chinese hot pot spot. I highly recommend the spicy soup base. It’s rich, fragrant, and has a great level of heat. There’s almost always a line, especially during dinner hours.

Overall great. The portion is large. Good meat. Great, responsive service. There are quite some black dots on the cabbage though.

Super pleasant, relaxed atmosphere. Food is terrific. The broths are very flavorful. We ate well.
